How to make banana pancakes

Today I am sharing how to make banana pancakes, my absolute favourite healthy breakfast or lunch! Don’t get discouraged by the healthy label, I swear this recipe tastes genuinely delicious and can easily satisfy every sweet tooth (like myself!). I’m sure you have seen this recipe before – maybe you’ve even tried it yourself. Well, I’ve experimented with it the past couple of years and I can finally say that I have found the perfect way to make the best banana pancakes. Seriously, try it out! When you follow these steps and add these ingredients, you will not only get the sweetness of the banana (just the sweetness, not nesseccarily the taste, because I don’t even like bananas that much) and the protein of the eggs. You will also be left with a satisfied feeling because your stomach is filled with slow-burning carbs from the oats that keep you full for at least a couple of hours. So let me share you how to make banana pancakes my way!

Ingredients for banana pancakes

Let’s start off with a list of ingredients. I usually get 9 mini pancakes out of one serving. That’s enough to fill me up and satisfy my cravings for a few hours, so I’d say these ingredients are for a single serving. If you’re making this for multiple people, just mutiply the ingredients with the amount of guests!

One serving (approximately 9 mini pancakes):

For every person you’re going to need:

  • 1 Medium sized banna
  • 2 Eggs
  • Cinnamon
  • Oatmeal
  • Coconut oil (or any other cooking oil)
  • Fresh berries**
  • Maple syrup**

** These are optional, but trust me when I say they make the result even better!

What else do I need?

To make preparations a bit easier, here’s what you’ll need to follow my instructions:

  • Oven
  • Frying pan + spatula
  • Bowl + fork (for stirring)
  • Plate

How to make banana pancakes in 4 easy steps

1. Prepare the banana pancake mixture

First of all, turn on the oven on a very low setting (I always go for 50ºC, which is about 120ºF). This will serve as a way to keep your banana pancakes nice and hot while you are working your way through the servings. The temperature of 50ºC (120ºF) will make sure that the mini pancakes stay warm, while preventing the plate from getting too hot to touch once you’re done. Now start working with your ingredients:

Once you’ve turned on the oven, it’s time to start preparing the ingredients. Take a bowl and peel your medium sized banana. Then break it into small pieces and put them in the bowl. Grab a fork and start mashing the banana. The little pieces will make this process a bit quicker rather than mashing a banana as a whole.

After you’re done mashing the banana, crack two eggs and add both the eggwhites and the yolks to your mashed banana. Then blend the banana and eggs together with your fork, until it becomes a nice consistency.

Cinnamon & oats
Now add cinnamon and oats (or oatmeal) to the mixture. I suggest adding them in little portions, allowing you to blend it in gradually. The cinnamon adds to the flavour, while the oats make sure that the banana pancakes fill you up and get rid of hunger and cravings for the next few hours.

2. Make the banana pancakes

Heat up some coconut oil (or any oil of choice) in a frying pan and scoop 3 small portions of mixture into the pan. It’s really easy from here on; just wait for 1-2 minutes and check if they are not sticking to the pan anymore. Flip them over and wait another minute and they’re done! It’s literally that easy.

3. Keep the pancakes warm

Now obviously you have lots of mixture left so you don’t want to stop here. Grab a plate and put your 3 banana pancakes on it. Then put the plate in the oven so they stay warm. Repeat step 2 and 3 until you are all out of mixture (usually this happens after 8-9 pancakes, depending on size and thickness).

4. Decorate with berries and syrup

Now it’s time to decorate your banana pancakes! Take the plate out of the oven and add the last 3 pancakes on top. Get your fresh berries, maple syrup, cinnamon or any other topping of your choice and go crazy!
